8/23/2023 0 Comments Applejack liquors holiday hoursBecause freeze distillation is a low-infrastructure method of production compared to evaporative distillation, and does not require the burning of firewood to create heat, hard cider and applejack were historically easier to produce, though more expensive than grain alcohol. Starting with the fermented juice, with an alcohol content of less than ten percent, the concentrated result can contain 25–40% alcohol. An alternative method involved placing a cask of hard cider in snow, allowing ice to form on the inside of the cask as the contents began to freeze, and then tapping the cask and pouring off the still-liquid portion of the contents. ![]() Periodically the frozen chunks of ice which had formed were removed, thus concentrating the unfrozen alcohol in the remaining liquid. The name applejack derives from the traditional method of producing the drink, jacking, the process of freezing fermented cider and then removing the ice, increasing the alcohol content: Cider produced after the fall harvest was left outside during the winter. In the 2010s, a number of smaller craft distilleries began to produce applejack in places such as New Hampshire, Pennsylvania's Lehigh Valley, New York's Hudson Valley, Holland, Michigan, and most famously in Toronto at Nickel 9 Distillery. Laird's great-grandson, Robert Laird, who served in the Continental Army, incorporated Laird's Distillery in 1780, after previously operating a tavern. The drink was once known as Jersey Lightning. It is a type of fruit brandy.Īpple brandy was first produced in colonial New Jersey in 1698 by William Laird, a Scottish immigrant who settled in Monmouth County. Our Laird’s Applejack and Apple Brandies are made at the peak of the Virginia apple harvest, in early September to mid-November. Many varieties of Virginia grown apples are used, including Jonathans, Gala, Winesaps, Staymans, Pippins, and Delicious apples. Laird’s is never produced from concentrate or purchased juice. Only carefully selected, whole, tree-ripened apples, which are crushed, juiced and fermented at our distillery, are ever used in the making of Laird’s Applejack. ![]() With the disappearance of orchards in New Jersey, as of the mid-1970’s our entire production of our apple brandies is distilled in Virginia using only fresh Virginia apples.ĪppleJack is now enjoying resurgence in popularity, both as a beverage and as a cooking ingredient, which imparts a tantalizing and unique flavor to a variety of dishes. It is very close to the Shenandoah Valley, a great source of apples. The Virginia Fruit Distilling Co., as it was then called, was a large producer of fruit wines and spirits being sold in Virginia and the surrounding southern states. One was our current distillery in North Garden, Virginia, near Charlottesville. Post Prohibition business was booming so the Laird family acquired two additional distilleries in the early 1940’s.
